NEW RECIPE ????Spiced Pineapple Upside Down Cake ????The perfect retro pud but made even better my way! Soft, moist, fluffy, tasty as fffff. Was on our festive menu @thegreenmaneversholt but thought you guys might fancy making it yourselves as a simple but gorgeous Sunday pudding. Let me know how you get on by tagging me!! Recipe ⬇️Topping-50g light brown soft sugar 50g soft unsalted butter 1 tin pineapple rings (438g tin)20ish glacé cherriesSponge-225g soft unsalted butter 225g caster sugar225g self raising flour4 eggs 1 tsp baking powder1tsp mixed spice 2 tblsp syrup from pineapple Method--Preheat oven to 160c fan -Line a baking tin with grease proof paper- square or round about 22ish cm -in a small bowl mix together the soft butter and light brown sugar and spread all over the base of the tin (grease proof paper) -place the pineapple rings on top of the butter sugar mix neatly and close together (reserve the syrup and if you have any pineapple left over chop up roughly) -place a cherrie in the middle of each ring and in any gaps where the rings meet-in a large bowl mix together all the ingredients for the sponge until light pale and fluffy. Fold in any of the left over chopped pineapple.-spread the sponge mix over the pineapple rings and cherries. Level out-place in the oven to bake for 35-45mins until risen, golden and a skewer comes out clean when poked in the middle -leave to cool for 10 mins before turning UPSIDE DOWN, removing the grease proof so the pineapple and cherries are now on top! -slice into wedges or squares. serve warm with clementine and cinnamon custard -will keep in the fridge for 5 days- just warm up for 30sec in microwave to serve #pineappleupsidedowncake #recipeoftheday #perfectpudding #retropudding #pubfood
