Hot Ice Cream has officially entered the Michelin-star chef chat.I’m so excited. 🍨 Pistachio–Cardamom Hot Ice CreamFinished with a kulfi pop.Created by @chefchetanshetty in collaboration with @SMiZEandDREAM.I never imagined Hot Ice Cream in a fine-dining restaurant, so I’m incredibly honored this is happening. The flavor, the texture… all of it. It’s truly a dream.Chef Shetty is a vibe… He works with whole, fresh spices, pounded by hand, never ground. That choice matters.Did you know…hand-pounding preserves the oils and aromatics in spices that disappear in commercial powders. The spices release slowly, giving this hot ice cream depth and dimension.Many of Chef’s spices are prepared by his mother. You all know I am super close with my Mama Carolyn, so I felt that connection instantly, so this collaboration is even more meaningful.Now, the Hot Ice Cream itself.The base is pistachio milk, made in-house at Passerine, and kissed by hand-pounded cardamom. Chef Shetty’s Indian heritage is a beautiful vocabulary, not a rulebook. He doesn’t begin with “tradition” or “authenticity.”He begins with curiosity.He asks…What feeling am I chasing?What memory wants to live here, now, in New York?This is @SMiZEandDREAM Hot Ice Cream through Chef Shetty’s lens.I tasted it and literally stopped.Then smiled.Then said,“Wow, Chef. I just landed in NYC and… wow. The cold hits you the second you step outside. ❄️🔥And maybe it’s the jet lag or the wind on my face, but something about arriving here made me emotional.On the flight, I was looking up ice cream shops, beautiful little businesses, family businesses, dreamer businesses, that had to shut their doors for the season. Not because they failed.But simply because cold weather makes lot of people stop buying ice cream.I kept thinking about the owners locking up early…the team members losing hours…the rent still needing to be paid.My heart just ached.And that ache is where Hot Ice Cream was born.That feeling… that helplessness… I’ve known it. I’ve lived it.I created Hot Ice Cream not just for @smizeanddream, but for ALL of us.For every scooper, every small business owner, every dreamer trying to keep their doors open when the world gets cold.So if you’re an ice cream shop reading this, even if you’re my competitor, even if we’ve never met, trust me. Was so much fun yesterday morning getting to enter the world of @smizeanddream in Darling Harbour with Meta and finally getting the chance to meet @tyrabanks in person! *Fun fact: Tyra shared a burger post I created many many years ago now that had icecream and hot honey on a fried chicken sandwich.* Fast forward to now and she's moved to Australia and opened an ice-cream shop and gone viral for her hot icecream (which we got to try and was pretty bloody delicious - burnt butter 🧈 chefs kiss).She's also just released her own Christmas jingle telling the story of Smize in the battle of Hot vs Cold and its origins. Bit of fun for the Summer holidays and definitely one dessert you should all add to the list.
